To make these flavorful blondies, you’ll need:

For the blondies:

  • 1 cup apple cider
  • 1 cup all-purpose flour
  • 1 stick butter, cut into chunks (½ cup)
  • ½ cup quick oats
  • ½ cup light brown sugar
  • 1 egg
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon apple pie spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • A pinch of salt
  • For the topping:
  • 1 tablespoon melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Prep and reduce the cider: Preheat your oven to 350°F. Line an 8×8 baking dish with parchment paper. Bring the apple cider to a boil over medium heat, then reduce the heat and let it simmer for about 15 minutes, or until it has reduced to ½ cup.
  2. Combine butter and cider: Add the chunks of butter into the hot cider, allowing them to melt. Set this aside and let it cool for 5 minutes.
  3. Mix the wet ingredients: Add the brown sugar to the butter-cider mix and whisk until it’s blended. Add the egg and whisk until thoroughly combined. Stir in the vanilla, cinnamon, apple pie spice, baking powder, and a pinch of salt.
  4. Add dry ingredients: Add the oats and flour to the wet mixture and stir until everything is well incorporated.
  5. Bake the blondies: Pour the batter into your prepared baking dish, spreading it evenly. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and top the blondies: Remove the dish from the oven and allow the blondies to cool for about 10 minutes. In a small bowl, mix the granulated sugar and cinnamon. Brush the top of the blondies with the melted butter, then sprinkle the cinnamon-sugar mixture over them.

Ingredients

  • 1 c apple cider
  • 1 c flour
  • 1 stick of butter, cut into chunks (½ c)
  • ½ c quick oats
  • ½ c light brown sugar

  • 1 tsp apple pie spice
  • 1 tsp cinnamon

For Topping

  • 1 tbsp melted butter
  • 2 tbsp sugar
  • 1 tsp cinnamon

Instructions

  12. Remove from the oven, allow to cool for 10 minutes.
  13. Mix the sugar and cinnamon together in a small bowl.
  14. Brush the top of the blondies with melted butter then sprinkle the cinnamon sugar over the top.
  15. When the blondies have cooled, cut into 16 squares and enjoy.
  16. Store in an airtight container for up to 4 days.

Notes

Sometimes I dice 1/2 apple and add it to this recipe for added fiber, or add 1/2 cup of dried cranberries or raisins.
