This recipe calls for just a few marshmallows, chocolate chips and graham crackers. So it is a great way to use up those leftover baking ingredients. Yet they’re pretty enough to serve alongside turkey pinwheel wraps at a late summer get-together.

Ingredients you’ll need
CHOCOLATE SMORES COOKIES INGREDIENTS
Here’s what you’ll need for the cookie base.
- 1 cup salted butter
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 1/3 cups all-purpose flour
- 2 tsp vanilla extract
- 4 sheets graham crackers
- 3/4 teaspoon baking soda
- 1 cup mini chocolate chips
- 8 large marshmallows (cut in half)

CHOCOLATE DRIZZLE INGREDIENTS
Just three simple ingredients for this drizzle!
- 2 tablespoons mini chocolate chips
- 1 tablespoon salted butter
- 1/2 teaspoon vanilla

How to make chocolate smores cookies
Here are the step-by-step instructions. Don’t let this intimidate you!
Your first step will be to make brown butter. This is a good, simple butter sauce used in many recipes.
Brown butter
- Melt the butter slowly in a saucepan over medium heat.
- Once melted, turn the heat up a bit and watch the butter closely while continuing to stir.
- The butter will bubble and start popping as the water evaporates.
- Keep a very close watch when this slows down, as the next step will be the browning.
- Once the solids start to roast, you’ll see small bits of brown forming in the pan. Stir the spoon around the pan a few times more, then quickly remove it from the heat.
- The butter should have swirls of browned bits in the bottom of the pan and is now ready.
Smores cookies with graham crackers
- Pour all the browned butter into a large bowl and let it cool for 10-15 minutes.
- While waiting, line a baking sheet with parchment paper or a silicone mat and set the oven to 350°F. Place graham crackers in a zip-top bag and crush them with a rolling pin until they are fine crumbs.
- Add the brown sugar and granulated sugar to the cooled butter mixture and use a spoon to stir well until thoroughly combined (3 minutes).
- Mix in the egg and vanilla extract until well combined.
- Add the flour, graham cracker crumbs, and baking soda to the butter mixture and mix well.
- Add in the mini milk chocolate chips and mix with the batter.
- Use a 1/4 measuring cup to measure out eight cookies, round each into a cookie ball, place on a baking tray and bake for 10 minutes until cookies are set.
- Immediately remove the cookies from the oven and press two marshmallow halves into the top of each cookie, overlapping them a little bit.
- Turn the oven on to the broiler setting to high.
- Broil cookies, watching closely, for about 2 minutes or until marshmallows are lightly golden.
- After browning the marshmallows, allow the cookies to cool for 10-15 minutes before adding the chocolate drizzle and graham cracker crumbles to the top.
Chocolate drizzle & graham cracker crumble
- Melt 1 tablespoon of butter in the microwave until entirely melted.
- Stir in 2 tablespoons of milk chocolate chips until totally melted with vanilla.
- Mix 2 teaspoons of butter with two finely ground graham crackers.
- Drizzle the chocolate over the still-warm cookies with a spoon, then sprinkle the buttered graham crackers crumble over each cookie.

Instructions

Graham Cracker Cookies
