As a mom and long-time baker, I’m always looking for ways to make tasty treats that my family will love. And nothing beats the classic s’mores around the campfire when it comes to camping. That’s why I created these mouth-watering chocolate smores cookies.

Chocolate smores cookies for camping

Nothing says camping season like the smell and taste of smores. Yet making them over an open campire isn’t always possible.

This chocolate smores cookies recipe is the perfect make-ahead treat for families who want to enjoy a delicious snack in their backyard or while camping this summer. 

This recipe calls for just a few marshmallows, chocolate chips and graham crackers. So it is a great way to use up those leftover baking ingredients. Yet they’re pretty enough to serve alongside turkey pinwheel wraps at a late summer get-together.

CHOCOLATE SMORES COOKIES INGREDIENTS

Here’s what you’ll need for the cookie base.

  • 1 cup salted butter
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/3 cups all-purpose flour
  • 2 tsp vanilla extract
  • 4 sheets graham crackers
  • 3/4 teaspoon baking soda
  • 1 cup mini chocolate chips
  • 8 large marshmallows (cut in half)

CHOCOLATE DRIZZLE INGREDIENTS

Just three simple ingredients for this drizzle!

  • 2 tablespoons mini chocolate chips 
  • 1 tablespoon  salted butter
  • 1/2 teaspoon vanilla

GRAHAM CRUMBLE INGREDIENTS

Buttery graham goodness.

  • 2 graham crackers
  • 2 teaspoon salted butter

How to make chocolate smores cookies

Here are the step-by-step instructions. Don’t let this intimidate you!

Your first step will be to make brown butter. This is a good, simple butter sauce used in many recipes.

Brown butter

  1. Melt the butter slowly in a saucepan over medium heat.
  2. Once melted, turn the heat up a bit and watch the butter closely while continuing to stir.
  3. The butter will bubble and start popping as the water evaporates.
  4. Keep a very close watch when this slows down, as the next step will be the browning.
  5. Once the solids start to roast, you’ll see small bits of brown forming in the pan. Stir the spoon around the pan a few times more, then quickly remove it from the heat.
  6. The butter should have swirls of browned bits in the bottom of the pan and is now ready.

  1. Pour all the browned butter into a large bowl and let it cool for 10-15 minutes.
  2. While waiting, line a  baking sheet with parchment paper or a silicone mat and set the oven to 350°F. Place graham crackers in a zip-top bag and crush them with a rolling pin until they are fine crumbs.
  3. Add the brown sugar and granulated sugar to the cooled butter mixture and use a spoon to stir well until thoroughly combined (3 minutes).
  4. Mix in the egg and vanilla extract until well combined.
  5. Add the flour, graham cracker crumbs, and baking soda to the butter mixture and mix well.
  6. Add in the mini milk chocolate chips and mix with the batter.
  7. Use a 1/4 measuring cup to measure out eight cookies, round each into a cookie ball, place on a baking tray and bake for 10 minutes until cookies are set.
  8. Immediately remove the cookies from the oven and press two marshmallow halves into the top of each cookie, overlapping them a little bit.
  9. Turn the oven on to the broiler setting to high.
  10. Broil cookies, watching closely, for about 2 minutes or until marshmallows are lightly golden. 
  11. After browning the marshmallows, allow the cookies to cool for 10-15 minutes before adding the chocolate drizzle and graham cracker crumbles to the top.

Chocolate drizzle & graham cracker crumble

  1. Melt 1 tablespoon of butter in the microwave until entirely melted.
  2. Stir in 2 tablespoons of milk chocolate chips until totally melted with vanilla. 
  3. Mix 2 teaspoons of butter with two finely ground graham crackers.
  4. Drizzle the chocolate over the still-warm cookies with a spoon, then sprinkle the buttered graham crackers crumble over each cookie.

Instructions

  3. **This step happens very quickly. Watch closely so it doesn't burn.

Graham Cracker Cookies

  1. Pour the browned butter (all of it) into a large bowl and let it cool for 10-15 minutes.
