Crunchy Kale Chicken Salad Recipe with Cranberries

A budget-friendly recipe with cranberries, walnuts and avocodo in a creamy poppy seed dressing.

Uses up leftovers, saves money, and serves as a delicious spring or summer main dish salad.

This recipe is versatile and can be customized to suit your preferences and what you have available in your pantry.

Cut chicken breast into 1 inch pieces.


To a medium size skillet add 1 tbsp of olive oil and add uncooked chicken pieces and season with salt and pepper.


Cook over medium-high heat until cooked through and beginning to turn golden brown.


Set aside and dice apple into 1-inch cubes.


Cut and dice avocado into bite size chunks.


To assemble salad add greens, chicken, apple pieces, diced avocado, walnuts and cranberries.


Toss, then top it off with your favorite dressing.
