Strawberry Rhubarb Muffins with Streusel Topping

Mixing fresh strawberries and tangy rhubarb stalks creates the perfect balance of sweet and tart flavor.

That's what sets this recipe apart from other muffin recipes.

The cinnamon and sweet strawberries offset the tartness of the rhubarb. And these moist muffins are soft and fluffy with a crunchy streusel topping that adds a delicious contrast of textures.

Mix flour with the rest of the dry ingredients in a large mixing bowl.


Line a muffin pan with paper liners or parchment paper liners. Fill each spot 3/4 full.


Mix the second amount of brown sugar and cinnamon in a small bowl.


Bake muffins in the oven for about 20 minutes.
