This easy potato puff recipe turns basic leftover mashed potatoes into crispy, golden brown bites. The recipe comes together quickly with simple ingredients, and it’s an excellent way to use up leftover mashed potatoes from the night before.

Here’s what you’ll need to make this recipe. It’s one of the most economical and tasty comfort food recipes I’ve made.

  • 3 cups leftover mashed potatoes
  • 2 eggs, whisked
  • 2 tablespoons chives or green onions, finely chopped
  • 1 ½ cups cheddar cheese, shredded
  • ½ teaspoon salt
  • Dash of black pepper
  • 1 cup seasoned bread crumbs (or plain bread crumbs with your favorite seasonings)
  • 2 additional eggs, whisked for coating
  • Cooking spray or parchment paper for the baking sheet
  • Optional for dipping: BBQ sauce, ranch dressing, or sour cream

Directions

Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Combine the leftover mashed potatoes, whisked eggs, green onions, cheddar cheese, salt, and black pepper in a large mixing bowl. Stir until the potato mixture is well blended.

Using a cookie scoop or spoon, form the mixture into 1-inch balls. Place them on the prepared baking sheet.

In a small bowl, whisk the remaining two eggs. In another bowl, add the seasoned bread crumbs. Dip each potato ball into the egg mixture, then roll it in the bread crumbs until evenly coated. Place them back onto the baking sheet.
