Ingredients
  

  • 2 red apples
  • 3 cups rolled oats
  • 2 eggs
  • 1/3 cup maple syrup or honey
  • 1/2 cup pecans roughly chopped
  • 2 cups milk any type; dairy, oat, almond
  • 1/4 tsp ground nutmeg
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 350°F (175°C).
    Cut the apples into small, even-sized cubes.
    In a large mixing bowl, whisk the eggs, milk, maple syrup or honey, cinnamon, nutmeg and salt until smooth.
    Stir in the rolled oats, chopped pecans and diced apples until everything is evenly distributed.
    Transfer the mixture to a 9 x 13-inch casserole dish and spread it into an even layer.
    Bake for about 35 minutes, or until the top is lightly golden and the center is set.
    Let the baked oatmeal cool for a few minutes before slicing and serving.

Notes

  • Use any apple variety you have on hand.
  • Dice apples evenly so they cook at the same rate.
  • Dairy or non-dairy milk both work.
  • Swap maple syrup for honey or another preferred sweetener.
  • Add raisins, dried cranberries, dates or almonds if you like.
  • Serve warm or cold with yogurt, nut butter, fruit or maple syrup.
