- 1 Cup Bacon
- 1 Cup Chopped Spinach
- 12 Large Eggs
- 1/4 Cup Jalapenos
- 1 Cup Cooked Hamburger Chopped
- 1/4 Cup Green Pepper
- Salt and Pepper to taste

Preheat the oven to 375 F.
Grease a 12-count nonstick muffin tin, or preferably line with silicone liners.
Crack all 12 eggs into a bowl and beat well.
Add bacon, chopped bell pepper, hamburger, cheese, jalapenos, and spinach to the mixing bowl.
Mix well and season with salt and pepper and your fresh herbs or dried herbs.
Add 1/4 cup of egg mixture to each muffin cup.
Bake for 15-20 minutes or until the top is lightly golden.
These can be stored in a closed tight container and refrigerated for up to 6 days.
