Mix the flour, baking soda, cinnamon, nutmeg, and allspice. Set aside.
In a separate bowl, beat the butter and brown sugar until light and fluffy.
Add the egg and vanilla and beat to combine.
Add the flour mixture and mix until combined.
Fold in the shredded apple and oats.
Cover the bowl and place in the refrigerator to chill for at least one hour.
Preheat the oven to 350 degrees when ready to bake, and line a baking sheet with parchment paper.
Use a cookie scoop to scoop the dough onto the prepared baking sheet and bake the cookies for 10 to 12 minutes until the edges are golden brown.
Allow the cookies to cool on the baking sheet for five minutes, then transfer to a wire cooling rack to cool completely.
When the cookies are cool, prepare the glaze by whisking the apple juice and powdered sugar until smooth.
Drizzle the glaze over the top of the cookies and allow it to harden before serving.
