Preheat the oven to 375°F (190°C).
Prepare the apples:
1/4 cup butter, melted
3 apples (1 red y 2 green)
3 tbsp honey or syrup
1/3 cup coconut sugar
1 tsp ground cinnamon
1/4 tsp ground ginger
Slice the apples thinly, approximately 1/4 inch (6 mm) thick,and place them in a large bowl.
In the bowl: Add the melted butter, coconut sugar, honey (or syrup),
cinnamon, ginger, nutmeg, salt, and cornstarch to the bowl.
Mix well until all the slices are evenly coated.
Place in the dish: Pour the apple mixture into an ovenproof dish (approximately 6 x 10 inches or an 8 x 8 inch square baking dish.
Sprinkle the chopped pecans on top.
Bake for approximately 30 minutes, until the apples are tender and lightly browned.
Gently toss to coat the apples with the caramelized sauce that forms during baking.
Let cool for a few minutes before serving.
