- Using either a stand mixer or hand held mixer, combine room temperature butter and apple sauce.
- Add vanilla, brown sugar and granulated sugar, mix for 1-2 mins and then add eggs and beat until smooth.
- Take medium apple and dice. Add this to mixture until combined, folding it in with rubber spatula is recommended but can use stand mixer or hand held mixer as well.
- Add flour and baking soda and mix until smooth, do not over mix this step as it will lead to toughening of the dough.
- Add white chocolate chips and mix until all of the chips are combined
- Use a cookie scoop or a spoon to create even 1.5” balls. Place on top of baking mat or parchment paper on your cookie sheet.
- Bake for 10-15 minutes depending on how crispy you like your cookies! Watch for a light brown edge or top of cookie
